Not sure what to cook for dinner tonight? Try out this easy classic chili recipe!
Chili was not a dish I grew up eating, but I came to love it when a coworker brought it in for a potluck. In fact, the entire office loved it so much that she would bring in crockpot chili every Fall with all the fixings on the side! So delicious! She shared her recipe with me, and now I will share my take on a classic chili recipe with you!
Disclaimers: I am a home cook, not a professional chef! Also, I grew up in a Caribbean household where we don’t really learn to cook with measurements. I’ll try my best to provide some for you!
- 1lb ground beef (turkey or chicken)
- Chili powder – 2-3 tablespoons
- Garlic powder – 1 tablespoon
- Paprika – 1 teaspoon
- Salt – 1.5 – 2 teaspoons
- Black Pepper – 2 teaspoons
- Cayenne or Red crushed pepper (optional) 1.5 – 1 teaspoon
- 1 can tomato sauce – 8oz
- 1 can of petite diced tomatoes – 15oz
- 1 can of kidney beans – 16oz
- Olive oil – 1 tablespoon
- 1 small or medium onion – chopped
Toppings vary based on your preference – I used:
- Cheddar cheese
- Sour cream
- Green onions
Add olive oil to the pot and sauté 1 small chopped onion then add ground beef (turkey or chicken)
Add seasonings: chili, salt, black pepper, paprika, cayenne or crushed red pepper flakes and garlic powder. Mix. (For maximum heat add the red paper flakes to the olive oil with the onion)
Once the meat is browned.
Pour in tomato paste, the can of tomato sauce, and the can of chopped tomatoes. Stir.
Add rinsed red beans. Stir.
Add either 1.5cups of beef (chicken) broth or water. (I added water)
Taste for salt. Let it come to a boil then simmer for 25 mins uncovered.
Serve with your favorite toppings – cheese, sour cream, scallion, avocado.

*Cheddar Jalapeno Cornbread
Use 2 boxes of Jiffy mix, add ingredients on the box, about 1/2 cup of grated cheddar cheese, and 1 chopped jalapeno. (keep seeds in if you like it spicy) Bake according to the box – about 20 mins & Enjoy!
